Cream Tea

Hi all. I am a chef @ a catering Co. in Colorado.I have a client that has requested a hot, cream tea. Anyone have a good recipe?

Hi there;

In the U.K., a, "Cream Tea", refers to the scones, clotted cream and raspberry jam served with hot tea. Serve scones, cream and jam in separate dishes as the person having tea prepares their own scones. If you want, you could prepare the scones yourself. Scones should be split in half, loaded with a healthy dolup of cream on each half, topped with good raspberry jam. If clotted cream, or Devon Cream, or English, "double cream", isn't readily available, whipping cream whipped to a very thick consistency would be a good substitute. Fresh strawberries or raspberries could top the cream as well.

In the U.S., its customary to ask for hot tea as opposed to iced tea. Perhaps your guest's request for a, "hot", cream tea means they don't want iced tea with the scone treats.
