I believe this is a Best Tea House / Tea Gallery thing, at least people trained by them are the only people I've seen who do this. The idea, from what I understand, is to kind of get an idea of the tea going "full circle".

Another thing to keep in mind is that if you don't keep it over a small flame or something to keep it warm (which I have seen done), the rinse will be much cooler, so it will taste different not only because it's the rinse, but because of the temperature difference.

It does help a little to sit some sort of lid on the faircup to keep it from cooling off as fast. A ceramic pitcher with a lid and spout (have Lin's in mind but there are many) over a tiny flame would certainly be ideal.

Sometimes I dump the rinse and wish I had it again later. My normal tea drinking friends brought guests recently, and they asked, why couldn't you just brew this tea (Golden Buddha) in a large teapot for one big infusion. It wasn't too hard to point out the "three changes" of the tea over 7 or so infusions, but going full circle with the rinse side by side would have completely sold it in my opinion.

Tea tips are all in good fun, try it, if you don't care for it... don't include it.

With things like puerh, you may prefer the 1st infusion and not the rinse.

Da Hong Pao from Chinese Tea Culture

I have been getting lazy these last few nights and bashing out the tea on return from work, not bothering with the rinse just giving it a few seconds longer than I would normally for a first infusion post rinse.

Well my first no-rinse infusion of nigh on 30 seconds was very disappointing, insipid and flat.

I decided not to write about it because IPT is one of our TeaChat friends :oops: .

Hold on - the 2nd infusion (35 seconds) is really nice - a great balance of light charcoal and pleasant roasty flavours with tastes of wood and minerals coming through in different parts of the mouth or different parts of the gulp.

3rd infusion (40 seconds) is less powerful than before but a lovely sweet water taste at the start - 4th rapidly sipped cup before the charcoal reappeared - but stayed sweet throughout all 4 cups.

7.9 grams in a 170 ml Shouzen Drop Ball dicao qing
(7.9 grams because IPT supplies his DHP in small foil packets)

A first tasting of Anxi Tie Guan Yin 1989 from CS.

Medicinal and a bit minty, but a bit thin. Slightly warming, but more is expected from a tea with such a title. The price is about right, though. This seems to be the case for most aged oolongs from CS.

Huang Jin Gui by Norbu Tea, Fall 2009 Harvest from Anxi

Just opened this one, and it is lovely. First impressions are sweet, floral, delicate, with less caramel than an Alishan and yes, less sharpness than a TGY, but these changes bring the sweet and floral notes front and center. Wow.

Using a small porcelain gaiwan, about 2 grams of tea in 60mL with water 195 degrees, about 30-45 seconds per infusion to start.

Nangan region Baozhong from Floating Leaves Tea.
This was a sample I am just now getting around to trying and
it's really quite good.

Just got some dong ding from DTH. Name reminded me of Leslie Phillips......probably have to be UK to get that reference. Anyway I love Taiwan oolong now. Every one I've had has been amazing and stood up to my long infusion again and again. This one is fantastic. Took till the 3rd brew to hit its peak...proper endurance tea.....extreme!!!

I dont time my tea....I just drink the first infusion then base all the rest of the infusion times off that. I just sit at the table and be mindful of each brew in comparision to the last, so I cant offer any brew advice I'm afraid.

ripe + with "hidden" beauty, but still intensive;

Trying out HouDe for the very first time and so far what I have tried has met expectations.
The boazhong is great brewed stronger then usual, with a little more leaf then usual. A real nice creaminess comes out like that along with all the typical boazhong goodness.
