I had this saturday afternoon Bancha Houjicha, Keemun Mao Feng, Uji Gyokuro Kame-Giru-Shi and this evening Darjeeling Puttabong S.F.T.G.F.O.P.I.

Having some snow peony from Red Blossom right now. Kinda weak - need to rework the steep. Love Ambrosia's white peony, so I'm feeling a little disappointed.

I finished off with a nice round of Takumi Sencha from Yame. Hitting my 5th steep now. This was my 4th tea of the day. I shoot for 3 and if I overachieve and get a 4th...well, that is clearly a bonus.

Some really good teas going down in the last page or two. That oolong that Tenuki was talking about really sounds like a winner.

And I definately need to add a few teaware items.

Turned out to be a great TeaDay. I hope everyone enjoyed it.

Today was hectic, so I ended up drinking chocolate tea and valentines tea. Tonight I may have some golden monkey to relax with.

Do you use 1 g per 2 oz? That's my standards rule for Sencha but I usually only get three steeps because the subsequent ones are too light to my taste.

How much leaf I use for sencha will vary from sencha to sencha. Most sencha I use 4.25-5 grams per 180 ml.

How many steps you get depends on many variables. I tend to keep the sessions moving aong, never allowing the leaves to cool and raising the temp for each steep as well. Time is usually 1.5ish min, 30 sec, 60 sec, 3 min, and the last steep I use boiling water and do not time it, might be 5 min or even 60 min, time does not seeem to matter at this point. The last 2 steeps are completely different from the previous 3, mellow and sweet.

I go for 5 steeps consistanty with sencha...there is no rule that says how many you will get. On the green tea forum, it got pretty intense recently discussing this. I simply enjoy getting all the goodness out of the leaf...
