I'm hoping to start a new high-quality tea bar, focussing on increasing tea-love and not profits. Is there anything that you think should definitely be on the menu, or not for that matter? Or just any general advice?

To help with funding and the business plan, I would be really grateful if you could fill this in:

sample sample sample, from many different sources, and learn as much as you can before you jump in to selling

don't be one of those typical American teashops who just buys tea from some American wholesaler who in turn buys from standard big seller in China. Mediocre of the mediocre. Hard to fall in love with stuff like that.
