You must not be looking hard enough
"pu-er tea flavored potted beef shank and quail eggs"
(not sure this is a traditional dish though)

Definitely more expensive than the Yunnan places here.

The menu is maybe 20-30% authentic Yunnan dishes and 70-80% "i bet they'd eat this in Yunnan"

While Lotus Blue isn’t serving traditional Yunnan food (“It’s been adapted for modern palates, for New Yorkers,” says Lim) one of the four partners behind the restaurant.

I don't think the beverage menu was shown on the NYT post at all.

I can't find the non-alcoholic drink list, but does look like they feature a pu'er and rum cocktail, so I'm guessing they have some sort of hot pu'er that you can enjoy with your $18 bowl of crossing-the-bridge noodles.

I assume authentic Yunnan dishes would be a bit too inexpensive to sell in Manhattan :P Usually fusion is the key word to make it a big hit.

P.S., I want to add - either too inexpensive or too scary :P

from eater.com :
Tribeca: Lotus Blue, possibly the first ever restaurant in Manhattan to specialize in food from China’s southwestern Yunnan Province, opened on Tuesday night tonight on Reade Street. The menu features Yunnan-inspired dishes like a banana blossom and mango salad, steamed pork belly with candied plums, and sesame pumpkin pancakes for dessert. They also have a specialty cocktail menu with drinks made with things like Thai chili-infused vodka and jasmine tea-infused tequila. Status: Certified Open; 110 Reade St., 212-267-3777.
