Withering leaves and wind

This is a very minor question, but it has come to me and wants an answer.

I've seen many farms wither their leaves in the open air. How do these not blow away in the wind?

I reckon (and hope) they expose them where the wind doesn't blow, close to a wall (either artificial or natural) that will shelter them.

From the pictures I've seen, they aren't large open areas. Rather, the withering areas are more like courtyards among buildings, which shelters them a bit. Also I think it's an active process. They don't just spread them out and...go for a cup of tea... someone monitors, and if it gets too windy you can always pack up...but that's my limited opinion.

If this is the primary withering we're talking about, the leaves still have a high moisture content, so they're heavier. Shaiqing'd be a different story tho.
