Too much leaf gives quite a different sensation. Maybe give it a try with a cheaper tea and really overdo the leaf to water ratio so you can be sure you're not confusing "too strong" with bitterness. This should narrow it down to what parameters you need to be tweaking.

I just want to report I got a successful brew this morning. Lowered the temp just a smidge and adjusted the leaf to water ratio a bit and brewed as per O-cha's instructions. I have flavor and umami. :mrgreen:

Matcha Kotobuki, gettting really close to the end of this tin. Both Horray and awwww. While it is no where near as fresh as it was shortly after opening it is still a very nice and enjoyable Matcha.

I began my tea day with a sample of 2012 sejak from O5 tea. This tea is remarkably more delicate and with just enough of a hint of that 'tree resin' flavor note that I experienced with the 2011 3rd pluck sample. I'm looking forward to buying sejak from the 2013 harvest and learning to brew it to my taste. It should be even better when it's fresh, even though O5 packs their samples in very good packets.

Currently trying Maiko's sencha Maruyama. Very nice I would say! Loads of umami and lingering sweetness. Not wallet busting too! :D

This is the bag I am working on at work. I really love this. It's actually got a nice sweetness going on. Very subtle, but present enough to make a nice impression.

Enjoying An Ji Bai Cha from Norbu this evening, while filing taxes--my last unopened package of 2012 green tea. I think I've got the green tea cycle in pretty good control this year. There's one more package of green tea I'm finishing off at work, OTTI 17, and then I'm out and ready for the new year's tea.

Green tea seemed right for forking out the greenbacks....

I also tend to drink green tea while doing taxes... it calms me down, and keeps me from getting too agitated... :D

Another absolutely stellar Gyokuro from Maiko Tea. If this is what Takumi is like, I am almost worried at how good Maiko's top of the line Yamashita Gyokuro will be! :shock:

Today I finished off the Tea Trekker 3rd pluck sejak. I had the thermostat on the tea kettle set to 150° but I absentmindedly poured the water early. It was a happy accident as the tea was transformed into a delicate sweet green. I really must get an instant read thermometer so I can pour the heated water into a pitcher and check the temperature.

I opened a bag of sae midori from o-cha earlier today... first cup was horrible, it had no taste, just sweet teawater. So next time i tried more leafs, and it was Ok but i couldn't find very much taste anyway. Now i brewed it for 3rd time and i really enjoy it, but it is still very mild (i really have to do my best to spot what is going on while taking sips), and I am wondering is it actually an extremely mild tea or there is a contribution to loss of taste due to fact it is harvested almost one year ago?

We didn't ship the 2013 Sae Midori shincha until the 17th, and this is the 21st (Japan time). You are in Eastern Europe, quite a feat to receive that in Eastern Europe in 4 days unless you shipped it by EMS. So the question is, are you talking about 2012 Sae Midori or 2013 shincha Sae Midori?

I've been trying out a couple of different greens from Jing Tea Shop over the past week: Weng Jia Shan Long Jing and Mao Jian. They're both very good and have that bean kind of flavor (especially the Long Jing) and are fresh at the same time, which is great since it's been a little warm this month. The Mao Jian tastes a bit more vegetal and holds up to more steeps.
