I understand this is an irreconcilable difference between my palate and that of many here who insist on this point. I cannot cope with the unpleasant bitterness that results in many such teas when I have tried them brewed with boiling water; I hated green teas passionately for many years before I discovered that they could be tamed with cooler brewing.

In this case, however, I suspect this one can take boiling water and still make *me* happy. Testing that shortly.

True, but I've some of them couldn't be bitter even if you tried. Maybe I have some kind of taste mutation lol

People *do* vary in their sensitivity to bitter. There are clear genetic differences in sensitivity to some bitter tastes, in part due to differences in the number of taste buds between individuals as well as over the course of a lifetime (decreasing as we age), and some people just find bitter more objectionable than others. This Wikipedia article about tastedoesn't go into great detail, but is a place to get started if you want to learn more.

I did try the Han Zhong Xiao Han again this morning:

2 grams in 50 cc shiboridashi by Shawn McGuire, fully glazed, into Shawn’s little shino cup.

205° 1 minute
warm, vegetal, floral, delicious

205° 30 seconds
astringent/bitter, unpleasant overcooked peas taste overcoming the delightful vegetal delicacy of the first infusion, though that is still present

167° 1 minute
Tried dropping temp a bunch to overcome the effects of that 2nd infusion, and it worked a little bit, but the cooked taste is still there, more a background effect than dominating over the lovely vegetal tastes

180 degrees, 1 minute
similar to previous, with the floral/vegetal over the cooked

190 degrees, 2 minutes

Suspecting this might benefit from a ‘wake up’ hot first infusion, then immediately drop temperature a lot for 2nd infusion and thereafter.

Shohokuen shincha. Uji tea. Just opened the new bag for my first tasting of it. Smooth, soft tasting, not bitter. Brewed at low temp, below 60c, 60 sec for first, then 15, 30, 60. 5g in 125ml Banko kyusu.

Ryuouen matcha in subtle Irabo chawan. Afterwards, I just gazed at the kodai marveling at how the glaze gathered there, picking up a deep, subtle blueish white color.

correction:This is an Ota-yaki chawan, not Irabo.

Beautiful piece. I tendentially love chawan with blueish glaze .. somewhat this colour makes them ethereal.

For me, it's less about the blue than about the translucency and variation in the appearance of the glaze....which is gorgeous here.

Ryuouen matcha in Korean style (Hagi) chawan. A variation on the previous style bowl with thick globules of the glaze forming at the kodai. These are nice bowls to hold. Subtle glazing speaks loudly to me.

Jing Ting Lv Xue..

Mt.Jing Ting is located in Anhui province..

South Anhui, Jiangsu and Zhejiang provinces are called Jiangnan (river-south..yangtze river)..this area has been a mecca for producing green tea, most of Chinese green are produced from here.


Greatest poet, Li Po, once wrote a poem about this mountain...

Birds soared high and vanished..

Winds just float around solely

What doesn't bore each other facing together

Only is Jing Ting mountain
(translation alert :D )
