I just finished a session with Thes du Japon Honyama sencha, a decent but not brilliant session--but I cannot in any way blame the tea, as I was the one who forgot most of the OTTI 16 teas in their envelope.....and just rediscovered it mixed up in some old mail.

A very nice session with another of the OTTI 16 offerings, the Oku Midori. It was delicate, vegetal, pleasing hints of floral and fruity, despite being accidentally (carelessly) aged. A nice morning sencha.

Organic Houjicha from Den's Tea: Tonight using thin-walled gaiwan, more time, & a lower temperature for infusions than Den's suggests. I don't have a word for the main flavor which lies between vegetal green & some typical roasted oolong.

I like it but have not found the exact parameters or teaware to get the best of this tea.

Previous parameters in various teaware has netted infusions that are too sweet, nicely vegetal w/o bitterness but also w/o enough complexity, & generally lacking depth.

The dry leaves have a lovely look & feel.

Organic houjicha again. Finished playing w/ parameters & laugh at myself now because I am essentially following Den's suggestions.

This tea cools nicely, good not so hot, room temperature, cool.

Drinking a generic Japanese green tea teabag in a paper cup in my hotel room in Okinawa. The teabag stuff seems to hold up to boiling water very well, but doesn't have much aroma to speak of. Had an interesting breakfast of Okinawan sausages with gray poupon mustard (?), a poached egg in mirin (I think), Okinawan congee with dried scallops and Okinawan miso, natto on the side and two glasses of cold organic black tea. Matcha cake rolls, fresh grapefruit, orange slices and pineapple to finish with.

I agree, and with a big meal like that, I feel like really good tea would be wasted. No teaware for the good stuff either, but I do have some organic green teabags I bought yesterday...

I don't yet have any photos, so it seemed to make more sense to discuss my first session with my Shimizu Ken kyusu (thank you, kyarazen) here rather than in the 'ode' topic. I'm four or five infusions into a session with Xi Hu Long Jing from Norbu, in simultaneous session with a porcelain gaiwan of similar size. The kysusu makes a remarkable difference. It holds in the heat much more (no surprise) but also smooths the rough bitter edges wonderfully--more than I would have thought possible. It's not simply the effect of drinking hotter tea, because I've let a couple of the infusions cool considerably and checked again. A couple of tea samples accompanied it across the Pacific, but I think this one has found it's role already with Chinese greens.

Thank you for reporting on different results from use of gaiwan & use of kyusu. (I offered to swap for that particular, left-handed kyusu but cash was preferred.)

I drink houjicha. Though relatively easy to prepare, thickness of the walls of teaware etc. seems to effect results a lot.

I have given up on other Japanese green tea because I cannot afford & cannot accept how much tea I waste before I prepare it well.

After-lunch tea @workplace: Ippodo Kakurei. Because of this relaxing moment, I do not regret bringing a kyusu to my office every day :)
