I'm such a happy camper right now. :mrgreen:

Seong-il hobin and not one but two matching cups. I can't get over how beautiful the glaze is and how nicely it pours. :D

Chinese jasmine green tea. I bought a Chinese tea trial pack from a decent tea shop here in City, with pu-erhs, white, green and oolongs.

I want to give Chinese teas another chance after my bad experience with astringent Tie Kuan Yin at another place in Melbourne.

But having brewed my jasmine green at good temperature and not too long, I'm afraid I have to say I just really don't like it. I guess Chinese greens are not for me...

Now I should be careful not to prejudge the other samples in the pack.

No green today. I sit and wonder. All arrived in the same time. Sencha Maruyama, Sencha de Honyama, Tamaryoku-cha from Miyazaki. Have no idea which one open first(?)

Sometimes in situations like this, I go in alphabetical order, or something equally arbitrary. Honyama, Maruyama, Miyazaki....

I recieved 11 bags of sencha the other day. I know the feeling. I just took the first one. :wink:

Back to my Japanese fukamushicha :wink:

I was told yesterday by the Japanese owner of a tea shop in Melbourne, that fukamushi is a technique that has been relatively recently 'invented', so that you don't need to care about the water temperature; fukamushi sencha will always turn out well he said.

Still I'm not going to risk brewing with hotter water than 70 deg C...
Why would I anyway :wink:

Im starting day with Sushi - Hikarimono. (Its a good idea?) So Im drinking Agari, I find that tea under my bed.;d;) Little sweet.:)

Yes I believe it was around the time of the Tokyo Olympics. 1960s?

I never brew any Sencha over 63c myself. Most Fuka around 60c. I find the unami flavour really strong like this. But I know I'm pretty much on my own at this end of the spectrum :D I just really like the profile at that temp.

I usually prefer fukamushi at the lower end of the spectrum as well, starting around 60°C for 1min30. I try different temperatures when I meet a new sencha, but with fuka I tend to prefer to begin low as well.
