Hi all,
I just got some "fresh" green tea leaves ( it has a nice grassy smell opening the foil pouch only a few millimeters ) that I would like to keep fresh while I work on another already opened bag.
Will freezing or refrigerating the tea help keep it fresh?
Can green tea leaves be refrigerated or frozen?

After a bag is opened, its degrading every minute it is in contact with air. I would put the remaining tea in an airtight container and put it in the freezer.

It is going home into a ziplock bag and the freezer tonight.
Should it be thawed before it gets steeped?

Be mindful of condensation. You will have to see for yourself how these things are a factor.

i have been thinking and reading about that question since quite some time.
My conclusion is the following:
1. If the tea packs are still unopened, e.g. airtight, its best to store them in the fridge. There appears to be no one contesting that.
Its more complicated if they have been opened: Its important though to take them out and wait for 12-24h before opening the packs - if the leaves are just a bit cooler than the air, they will attract condensation which is a big problem. So if you put an open bag in the fridge, its important to seal it very well - besides moisture, theres also the problem that there's often very intense smells in the fridge - the smallest opening and the tea will absorb all of that. There are many people storing open tea in the fridge, i personally don't.
2. Things are quite unclear considering the freezer - there appear to be two schools of thought. Some people are totally against it, and with good arguments. Some other people are doing it without lots of problems.
So my conclusion is: If I had more room in the fridge, I would store my unopened teapacks in there. Since I don't and a number of respectable tea people advised against the freezer, I play it safe and store them at room temp. Instead, I try not to have many green tea packs open and use them up in up to 4 weeks.
