Home Processing Green Tea

This spring, I'm hoping to harvest wild tea here in Hong Kong. I came across this article on processing that I think you guys will like. Maybe I should go out there in March and fertilize a few trees with worm castings and compost as nitrogen appears to be essential to good aroma in green tea. ;)
