How much, what temp, what is a good leave to water ratio.

Generally speaking, this is a relatively casual Japanese "green" tea. 6 ounces of water, 1-2 teaspoons, boiling water, 15-45 seconds to taste. Resteep!!!

I've also seen it suggested though to use boiling water for the roasted japanese teas. To follow the normal rule though, try what you will and like what you like.

Thanks i did a heaping teaspoon for a cup. It is amazing, really smooth and oddly sweet flavor with a nice roasted smokey finish. I think this is some of the best tea I have ever had.

I've tried boiled water and a shorter steeping time, and 180 water and a longer steeping time. Both worked.

I'm in the market for more hojica. Where did you get yours?

You might want to try Den's Houji-Kukicha if you haven't already.

I am very fond of the houji kukicha from Den's Tea. Their houji genmaicha is also quite decent.

For me houji is as simple as tea gets. Toss some in a pot and add boiling water. It doesn't seem to matter how long I steep it, results will only vary slightly.

When I get time, I will borrow a camera a make a personalized (gyokuro related of course) avatar. Until then, if you want to tell us apart, I am the one speaking with the cute French accent. :wink:

Psh how could you get the two of us confused. Do you know how hard it is to separate you from all of the other matcha crazed people with chawans and purple flowers in their avies? YOU KNOW HOW HARD? not very.

Alas I do not have anything that I would consider cute or french.
