I don't know if it's out of season now, but earlier this year I picked some fresh red clover (in case you don't know what it looks like I posted a pic below) and some fresh mint and made a tisane, I tried it first without mint but it seemed a bit bland, with the mint it was VERY relaxing although the flavour was very subtle, kinda like some white teas. It took the petels from about 6 clovers and one mint leaf for a 8oz.

I grow my own peppermint and use that in teas by oven drying (set the oven at 120 for an hour and instant dried leaves). Oven drying does diminish some of the taste but I'm to impatient to wait for weeks for the herbs to airdry.

Using fresh isn't bad at all, but dried gives a more intense flavor and you can store it for when its out of season.

Also, when using fresh leaves, it helps to use twice as much as you would with dried...
Fresh leaves are never bad - it's great if you can pick your own. Just be sure that what you pick is at least a half-mile from any road or highway or else the plant will have taken in the pollution/dirt/exhaust.
