It's funny, I absolutely love Rishi tea but their white peony is the one tea from them that I think is not at the level of other teas I've tried from them. I've never tried their Jasmine white peony, however...so I'm not sure if it's the same base tea or not?

So I was wandering around in here (I'm still fairly new here) and thought to myself "self, I wonder if they have any good advice on white tea." I nearly always get it when I'm at a tea shop, but never get/make it for myself, and was wondering about tips and tricks... I read the advice on using a gaiwan for white, and (being unfamiliar with a lot of the terminology for teaware) googled it to get a good picture and possibly instructions. Lo and behold, I have 2 of them!
I bought them for my boyfriend probably 3 years ago, we've used them a couple times for various kinds of teas (normally when we each want something different).. but now I need to buy a good white to go with it!
Just thought I'd share my excitement!

Good question, Dresden. I am often guided as much by aroma as taste when brewing, since you can easily smell while brewing. If nothing else, it will heighten your awareness of aromas.
I am sometimes smelling fruitiness or floral sometimes veggie. It will really depend on the selection. Hopefully I will smell something desirable.
The best advice is to just do it! Experience will guide you eventually.
