Also, it is just sanitary to use hot water (above 70 C) in order to kill whatever germs may be on there. You are going to put your lips on it after all.
stentor, i agree it is important to clean a new piece to sanitize it. but the soaking process is more unique to hagiyaki due to the nature of the clay and firing, in regards to staining and leaking. that's my understanding.
