EDIT 11/15/10: I would expect some of you to begin receiving these OTTIs today. Here are some suggestions on brewing, etc.

I would suggest brewing 1/2 of each sample per session. This will give you 2 tries. I made a slight miscalculation, so instead of 8 grams as planned per sample, you received 7.65 grams per sample for everything but Fuji Super Premium and Miyabi which are 7 grams each. My apologies for this error! So adjust water volume accordingly.

Asamushi brewing.
This is how I do it, please feel free to offer other suggestions as well! I will add this to the OP as well.

160* or cooler in a preheated pot. Smell the leaves warming in the preheated pot!

If you use 1/2 of the leaf, this is ~3.8 grams, so 3.8 ounces water.
Smell the leaves in the pot between steeps!

1st steep 90 seconds
2nd 165* or less for < 30 seconds
3rd 175* or less for 60 seconds
Optional 4th 185* or less for 120 seconds
Optional 5th up to boiling water for up to 5 minutes

Alternately, asamushi can be brewed lighter with less leaf and/or more water. Togei was pretty nice this way. If you brew it this way (more Western style), increase time a bit and expect fewer steeps.

Fukamushi brewing.

This is how I do it, please feel free to offer other suggestions as well! I will add this to the OP as well.

I really played with temps this year, and prefer cooler water than ever this year ... interesting. I had used the benchmark 160* F for all HQ asa for several years, but now am brewing cooler.

160* or cooler in a preheated pot. Smell the leaves warming in the preheated pot!

Yame 158*
Fuji 153*
Fuga 158*
Miyabi 153*
Hatsumi 155*

If you use 1/2 of the leaf, this is ~3.8 grams, so 3.8 ounces water. (Fuji and Miyabi each ... 3.5 grams to 3.5 ounces water since these two each have a total of 7 grams!!!)

Smell the leaves in the pot between steeps!

1st steep 40 seconds SHORT brew time is critical for Fukamushi!!! However, if you lower the temp under 160*, you can increase the time with very good success.

2nd 165* or less for < 30 seconds
3rd 175* or less for 60 seconds
Optional 4th 185* or less for 120 seconds
Optional 5th up to boiling water for up to 5 minutes

Alternately, fukamushi can be brewed lighter with less leaf and/or more water. If you brew it this way (more Western style), increase time a bit and expect fewer steeps.

Another great OTTI! This time around, a dual OTTI, dueling OTTI-s. You can participate in one ... or the other ... or both. But as always "seating" is limited! So, time is of the essence. Be sure to PM your interest to me ASAP, see the first reply to this post for details.

If you are new to terms like asamushi, chumushi, and fukamushi ...

asa = light
chu = mid
fuka = deep
mushi means steamed
Therefore asamushi means light steamed.
We will be discussing this further in this topic, but it is also discussed in the asa, ch, fuka topic under Green Tea.

Brewing and tasting suggestions/guidelines will be included!

Numbers correspond to the number on each bag. A for Asa and F for Fuka.

Cost for this OTTI is the same as the previous 6.
