I willl also be posting this info at the very beginning of this topic's original post for easy access!

I would expect some of you to begin receiving these OTTIs today. Here are some suggestions on brewing, etc.

I would suggest brewing 1/2 of each sample per session. This will give you 2 tries. I made a slight miscalculation, so instead of 8 grams as planned per sample, you received 7.65 grams per sample for everything but Fuji Super Premium and Miyabi which are 7 grams each. My apologies for this error! So adjust water volume accordingly.

I will post more exact recommendations later today.
I recommend 1 gram leaf per ounce water (30 ml).
I recommend cooler brews, some of these do better with temps in the 150's* F in a preheated pot. Cooler than normal for many selections!
I will also post steep times today.

Ok, guess I'll be the first to post a review. :mrgreen:

I felt like starting with a fuka, so I brewed up O-Cha's Miyabi.

1st steep: 155F 60s. Light green colored soup; first sip was intensely sweet, almost sour. A wave of umami hit me at the end, really delicious.

2nd steep: 165F 30s. Deeper emerald-y color. Heavier on the umami and also the astringency, which I didn't mind. Great mouthfeel, getting definite notes of sugarcane, cream, and of course grass.

3rd steep: 170F 75s. Much of the same but more subdued. Still very flavorful and satisfying.

4th & 5th steeps: Above average for later steeps of Sencha, quite drinkable.

EDIT: I thought this was the Fuji SP while drinking it. :lol: I did think it seemed a little less steamed than I expected...

Started that night with the Hachiju-Hachiya-from Maiko. Very nice indeed.

Asamushi brewing.

This is how I do it, please feel free to offer other suggestions as well! I will add this to the OP as well.

160* or cooler in a preheated pot. Smell the leaves warming in the preheated pot!

If you use 1/2 of the leaf, this is ~3.8 grams, so 3.8 ounces water.

1st steep 90 seconds
2nd 165* or less for < 30 seconds
3rd 175* or less for 60 seconds
Optional 4th 185* or less for 120 seconds
Optional 5th up to boiling water for up to 5 minutes

Alternately, asamushi can be brewed lighter with less leaf. Togei was pretty nice this way. If you brew it this way (more Western style), increase time a bit and expect fewer steeps.
