Tea Pairing with food.

Tea Pairing with food.
What Teas match with what foods? Like Wine, you can drink the same tea with everything but some teas work better with some foods. What are some of your suggestions for a type of tea with a type of food? I like the basic Green tea/brown rice tea with Sushi.

I personally don't tend to drink tea with my food. I do in the restaurants when they serve tea, but it's tea in name only. I call it "Chashui" which translates as tea colored water. I'd rather drink tea when I can sit and enjoy it without my palate being polluted with food flavors.

lots of blacks pair well with different deserts and butter biscuits
I enjoy oolong with fruits too
sencha with sweets like mochi and other japanese confections
Wuyis that are thick and sweet brewed strong with the right mix of spicy food can be interesting.
Usually I just enjoy tea by itself though. I like to keep my hands clean and not get crumbs and sugar all over, or get my cups all oily or confuse the taste of the tea I have focused on.

I agree with the others that quality tea is best enjoyed on it's own. For Japanese meals, I like either genmaicha or mugicha. Standard black iced tea is an acceptable accompaniment for most American fare and many other foods.

My preferences for food with Japanese teas:
Konacha - Sushi
Yanagi - Ramen/Udon
Genmaicha - Donburi
Hojicha - Yakitori and other meaty meals including steak
Gyokuro/sencha/matcha - tea sweets if anything

We have a truffle cheese here. I think it is basicly a parm with truffle inside. It went really well with a Dan Cong.
