I cut the boiling water in the kettle with a bit of room temp water - sometimes this kettle is quite disruptive, with the lid rattling a lot - I thought that would distract from the tea making. My water was hot, but no more than 195. Yours should be a full boil.

Does that mean then that I should bring the water to near boiling for each infusion? Maybe I'm being too particular and should just go with the dao...

When using an electric kettle, I reboil every 2-3 rounds. Sounds like you are already on the right track.

I just saw Brandon's brewing-video and I must say that sometimes the world would be better at double speed, so that I can get to taste the tea faster.

I am surprised everyone is not clamoring, "where's my sheng???!!!???"
I am sitting on my hands waiting for the zip pouches for this SO to arrive. Sorbent's site indicates east and west coast distribution facilities ... NOT. I ordered expecting to receive them quickly.
Anyway, they should be here this week.
