Last night, I was putting some vanilla ice cream into a mug right next to a tea pot that had been brewing a late steep of aged baozhong for an hour of so. I poured out the tea and it tasted fantastic -- like it tasted on the first steep: rich, with a candy-like sweetness. I spontaneously decided to pour the 100ml over the top of my ice cream. It froze a light brown, crunchy tea-skin over the dessert. It was fantastic.

Most of us have had matcha or "green tea" ice cream at some point. This was different, but every bit as good, if not better.

I think the key was the type of tea and the vanilla flavored ice cream. I doubt it would be as good with chocolate or certain other flavors. Some of the older baozhongs that were originally somewhat roasted have that candy-like taste which complimented dessert very well. Next time I make home-made ice cream, I'm going to try to include this in the recipe instead of pouring it over the top.

That sounds amazing. I've seen Earl Grey flavored ice cream before (and, of course, the green tea flavor), but I think an oolong flavor sounds scrumptious.

I've made myself Masala chai milkshakes before; instead of milk, I added my own chai concentrate to vanilla ice cream in the blender. I think that ice cream companies should be looking into tea flavors. :mrgreen:

I am going to have to confirm that this is indeed a delicious idea. I just tried periodically dipping a fudgesicle in some late-brew Phoenix Oolong. It created a kind of cool gel on the surface of the popsicle with each dip.

Phoenix oolong in general seems to be a nice compliment to sweet desserts. The late brews that are less sweet and more bitter are particularly good for balancing the sweet flavours in the dessert.

OMG. I have to try this. It sounds insanely good. I would have never thought of this! Now to decide on which oolong and what type of ice cream... :D

Thanks I'll have to try this. Which type of oolong tea would you suggest doing this with? I am just going to use a little bit of the tea like when you make an affogato dessert with espresso.

Probably brew strong and add to mix?

A proper lapsang souchong brew concentrated pouring over vanilla or sesame ice cream with a pinch of fleur de sel. :D

This is, in essence, the equivalent of adding lots of sugar and cream to your tea, yes? Mmmmmm, sugar and cream....

Meanwhile, if anybody ends up with a good recipe for an ice cream maker (and one that isn't just powdered matcha), please do share!

wow, very fresh and original idea, haven't thought of it before, i should definitely try it to confirm. If ice cream can help to create a completely new taste of tea, maybe others( fruits, flowers, etc) can do as well, it's like a new world. :D

will try this soon, maybe with some aged oolong :)

i wonder how young sheng will work.

I think thanksgiving weekend will be a period of icecream/tea experimentation for me. i'll write a blog post about it.
