How is the sencha packaged? I wouldn't be able to take on the commitment if it needs to be drunk RIGHT NOW....

I have wanted to address this actually. Thank you for asking. These arrive here in brick kilos that have been vacuum sealed and nitro flushed. We will be opening, weighing (all 50 gram foil, zip-seal bags, I believe), packing, shipping all in the same day ... whew! Then participants will receive them within a few days with Priority USPS ... a bit longer for international.
I am hoping to score a heat sealer soon. I am not sure what else is practical at this point as there is nitro flushing and O2 absorbers.
I am purchasing 200 grams of each for personal use. I will keep 50 grams of each out for immediate use and then bag and rebag the remaining 50 gram pouches which will then go in the TeaFridge for use later.***
I am a big proponent of nitro flushing, but a lot of noteworthy, traditional vendors do not, such as Ippodo and I believe Maiko.
*** a word of caution to anyone reading this. While I do place already opened teas in the fridge after triple wrapping, I stop short of recommending this to others. I have never had a problem doing this, but there can be some risk, especially if not done properly.

I was going to do the whole thing late last week, then was reminded by the Mrs. of the holiday and no mail on Monday. I did not want the packages sitting who knows where for 2 days straight.

I'm ready for this tea. I cleaned out my Japanese washi-covered tea canisters that I use Chip-style - each one fitted with 3 stainless tins. And a cup of my favorite Sencha Otsuusan each morning so the tea is timed to be gone by the day the NOTTI arrives.
