Hi,
I have bought two Yixing teapots. One for green oolongs, the other for darker oolongs.
I'm trying to figure out in which of these teapots I should use for the oolongs in the middle, such as a medium roasted Dong Ding?

Matching oolong roast for Yixing teapots
If you can taste the roast use the one for darker roasts. This way your lighter roast pot doesn't take on a roast flavor that is easily imparted to lighter teas.

Try both pots with both teas and see what you like. My instinct would be to send mid-roast to the darker oolongs.

I suggest that you wait a few months before using either pot for mid-roast. If both pots get "seasoned" you have a choice to make; but, if that is not the case, then you don't need to choose. I've had yixing pots that remained neutral. Those pots seemed to do nothing for any tea nor take any character from tea. Of course, a few months might not be enough time for pots not getting a lot of use.

You're overthinking it - use both for all types, or just stick with whichever pot is better. That's what the pros (guys with decades of tea drinking) do.

i'm not a "fan" of those fantasies to which people think that by adding hot water to a pot they can get "tea"

I tend to drink anything roasted in my pots and anything very green (fresh TW high mountain oolong) in porcelain so I can taste the full spectrum of flavors. I'll usually try a medium roasted oolong in both porcelain and clay to see which I prefer for a given tea.
