So a did a quick scan of this article, which includes some interesting speculation toward the end.

The most amusing thing to me was the mention toward the end that matcha from coffee shops are mostly "pure sugar" and that you can tell because of the light color -- and that's exactly how the matcha in the picture at the top of the article looks.
