Whoa, the timing of this is amazing!!! This is the subject of TeaDay today.
I know a few people in China in the Tea industry, I would trust a local vs trying anything on my own. There are companies specializing in themed journeys. That can be more costly but might be more all inclusive.
There are many tea regions in China...so much to choose from. I would certainly try to include a visit to a plantation/farm producing a few of my fav teas.

It's going to be a rushed trip. So far here is our plan:
Seattle to Osaka (night in Osaka)
Osaka (night in Osaka)
Day trip to Uji (night in Osaka)
Day trip to Kobe (night in Osaka)
Osaka to Shanghai (early flight, night in Shanghai)
Shanghai to Hangzhou (night in Hangzhou)
Hangzhou to Wuyishan (night in Wuyishan)
Wuyi Mountains (night in Wuyishan)
Wuyishan to Hong Kong (night in Hong Kong)
Hong Kong (night in Hong Kong)
Hong Kong to Seattle (home)
This way I get to have Matcha in Uji, Kobe beef, see a bit of Shanghai, Dragonwell in Hangzhou, Oolong in the Wuyi mountains, and check out Hong Kong. I would really like a tour of tea fields in any of these places because thats why we want to go. All of this because I made my dad a really good cup of Oolong.

I am probably going to Osaka sometime in Sept/Oct. What's the best tea related stuff to do around there?
