Boil then cool for 2 whole breaths or 14 seconds.

I use just off the boil. If the steep time permits, I pour hot water over the pot to keep the temp up ... and because it is fun.

When drinking for pleasure and not analyzing the tea I find alot of newer sheng benefits from lower temps.

The more tea I drink the less use the guidelines become. In the past few days I've had new sheng with water 10mins off the boil, albeit in a partially thermal kettle, and green with boiling water.

Play around, it's fun.

I like having no idea how to brew a tea after cutting through 100g of it and enjoying it all the way.
