Hanayaka from Hirumaen. This is one of the more unusual teas from the innovative tea master from Saitama who seems to be turning Japanese tea making on its ear. I've never tasted anything quite like it. It is floral but not in a mainstream way. I believe he uses oxidation plus some kind of innovative exposure to UV light to alter the profile. The recommended parameters are 3g/90ml. 1st brew 70° 20sec. 2nd.....90° 10sec. Many brews ensue. I would suggest experimenting with these times/temp/leaf/water.
I wouldn't say it was a favorite of mine. The taste is so odd I have a difficult time describing it. YMMV.

Seikakou from Hirumaen. In a 60ml shiboridashi from Petr Novak. This is another tea whose profile has been altered through the proprietary processing of this tea master. It will not be to everyone's liking especially if one approaches it with 'normal' sencha expectations. It is both floral and tart with a lemony taste to me. Very strong huigan and covers the mouth for a long time. I prefer this one to the Hanayaka. Both have UV processing, I believe. This is really stretching the boundaries of sencha profile.

Re: Official what GREEN are you currently drinking?
Yes. After you decide what you want, or if you have questions, you can email him. He will send an invoice with shipping amount which you can pay with paypal. English is limited but adequate. Definitely try some of the Temomicha. You can buy them in small packets of 3g each. Even the less expensive ones will add a different level to your sencha enjoyment.William wrote:Thanks TO!!Tead Off wrote:No matcha. Only sencha and temomicha. Here.William wrote:Hi TO,

I've just bought a few items from Hosuien:

Matcha Kiku No Shiro and Shisen No Mukashi. I wanted a koicha but they didn't have any.
Sencha Miyama Midori. One that comes recommended in store. I tried some and it was fairly astringent but I figured I could probably do a better job, brewing it with more care. Plus my Japanese isn't up to the task of figuring out the differences between the various sencha and the lady didn't speak English.
Lastly, a bag of their gokujou genmaicha.

this is the one I like. I don't know the name of it. Is it one of the two that you purchased? They told me that it could be for either type of matcha.

That's shisen no mukashi. Labelled up as usucha. I was told that they only sold usucha in that store and I didn't see any of the koicha grade matcha that they have on their website. She never mentioned preparing it thick but she probably knew I wouldn't have understood her even if she'd tried.

Which store did you buy it at? Let us know which of the two you prefer? Is the other more expensive?Tead Off wrote:this is the one I like. I don't know the name of it. Is it one of the two that you purchased? They told me that it could be for either type of matcha.

Bought at Tokyu from the counter next to ippodo, as you described.
Kiku no shiro is more expensive by about 400円. I don't get home until this time next week (and will only open one at a time) but will report back soon!

Taisyou from Hirumaen. This is a sencha that has been lightly steamed. It is a difficult tea to brew just right, but today, I finally broke through after experimenting with several pots and parameters. 4g/70 ml small Banko kyusu. 1st brew, 50c 90sec. 2nd, 60c 30sec. A soft, velvety, refined flavor hit my mouth and seemed to float there. Subtle, but with some power in the mouth. A long finish and good energy. This is not a tea for those who are looking for fukamushi type flavor.
