I know I've seen the characters for sheng and shu posted here, but I can't seem to locate them. They're very handy to know should one come across an unknown bing,
Anyone have any idea?

Just because you see the word "sheng" on a wrapper does not always mean it's raw tea, because it can also appear in the context of "organic", "production", and myraid other ways. You're not as likely to see "shu" on a wrapper, but if you don't read Chinese, definitely do not take seeing "sheng" as the same thing as "this must be a raw puerh".

I'm late out of the gate on this one, but I would say that whatever is on the wrapper, be it; sheng/shou, chun/qiu, date or provenance, it's only looking at the tea itself that's going to give you an idea if it's more or less what the wrapper proclaims.
