Wu Ling steeping recommendation

by ummaya » Feb 5th, '19, 08:51

Hello,

I just ordered a pack of Wu Ling from Tea From Taiwan.

I have a small Gaiwan teapot. Any steeping recommendation ( water/leaves/time ratio) for 3 consecutive brewing sessions?

Thank you very much

Since it's a oolong tea and fairly tightly rolled, you should steep it at full temperature. Since you only want 3 sessions, I would use 3 grams only. Rinse the tea for 15 seconds to unfurl it somewhat. Then brew around 30 seconds, 30 seconds, 60 seconds. Note the brews are longer than usual with a gaiwan, because 3 gram is a fairly small amount of leaves for a regular sized gaiwan. Normally it's around 6 grams of tea which should last around 10 sessions. In such a case the brews should be around 15 seconds, which you slowly increase for the later sessions.

what's a 'regular sized' gaiwan ? 100ml, 140ml, 180ml ?
