And, the most important thing, is that a bioactive concentration of catechins is reached with long infusions, by 10 minutes or even more but not at 100°C.

About catechins extraction:
"When teas were extracted using ethanol solutions, the highest extractability of total catechins was obtained in 50% (v/v) ethanol for dry tea"

However I was referring to the common way of extraction: steeping tea in water. Bioactive is the key word. Bioactive concentration of catechins are reached @ 100°C for about 10 minutes.
I agree with you Chip when you say that drinking multiple infusion of ff sencha is a good way to get sufficient catechins. Steeping 4°th flush sencha @100°C for 10 minutes and some lemon juice drops is something I hope NOBODY will not try. For the series: "don't try this at home"...

Actually I prefer more FF 1sts steeps ... and second steeps ... and third steeps ... etc.

Just got back from a few days in Fukushima, it's a six hour trip each way. Guess what was about the *LAST* thing on my mind while I was up there? Answering a.serrao's post where he tried to bait me. It's pretty amazing to me that he has nothing better to do with his life than to sit around waiting for me to get back from Fukushima just so he can be "right" about something so minor. This, coming from a guy who has publicly stated he will buy no Japanese green tea for the year 2011. So if there are any other of you out there that were sitting on the edge of your seat for my results (and I doubt there are), sorry - I forgot all about getting that info while I was up there.
