This might be the thread where this post belongs? I finished working through my Ippodo Shincha recently and finally got around to arranging my thoughts about it.

Nice post, TwoDog2. It is interesting to hear the thoughts of someone not used to Japanese teas.

Perhaps I should do the same with puers. But puers are much more complicated than senchas (or shinchas), so maybe not.

I wouldn't say that senchas or shinchas are less complicated! For me, it was a new experience. My brewing technique was off and the flavors are out of my usual puer drinking spectrum. After a few weeks of shincha, I must admit I am sad that it is all gone. I guess there is always next year

with modern packaging techniques, you can drink shincha all year long... :wink:

This begs the question... at what time in the year would you opt not to purchase sencha if the vendor carrying the tea you desired was still carrying the shincha version?

The very popular vendors like o-cha have a high turnover rate so their shincha is going to sell out at some point. But other vendors may not have such a quick turnover rate and may have shincha for far longer.

Theoretically, the first harvest (ichi-bancha) will produce better leaves, but their processing will be the most crucial part. So a sencha well processed should be far better than a poorly made shincha.
