I devoted a couple of hours to using cassia seeds yesterday. I found that a teaspoon of the seeds infused in boiling water for 2 1/2 - 3 minutes makes a tasty drink w/ some nice body to it. It tastes like smooth coffee w/o acidity that delivers no caffeine kick. I could use the same teaspoon of seeds for 3 cups of about 6 ounces. I won't promote any of the health-related claims. The internet can provide them, I guess. Cassia is a nice drink fairly similar to coffee in taste though simpler.

I meant to say 3 infusions were yielded from one teaspoon. cheers

The lady at the store advocated mixing it with shu pu erh for summer drinking. Next time I'm in Taiwan I'll pick some up!
