Mouldy Cheese with Wet Stored Pu
What a combination! Nothing could be as far apart as these two originated, but I think they complement each well.

This is great! I remember drinking puer alongside a Stilton once, but I don't think the puer was wet stored. I am going to have to wait until I am in a place with good cheese to try it againapache wrote: What a combination! All that alkalinity in the fancy cheese will play havoc with the flavors of puerh in your mouth!

I also have tried drinking dry stored sheng with Manchego, and not only me but others there also thought they went well together.
I haven't tried all possible types of cheese, but IMHO, Stilton and Manchego would go well with pu whether it is dry or wet stored sheng or shu.
Obviously most pu drinkers are Chinese or people from the Far East and cheese is rarely eaten let alone trying it with pu.

I think Heston Blumenthal would have no hesitation to combine anything foods which are unlikely bed fellow with a strong contrast. Whether we agree with him or not, he is not lacking followers.

These certainly are the kinds of combinations that occur when people move from Asia to the West, or the West to Asia. Also, curse you for giving me a craving for Stilton and Manchego. That urge is going to have to wait unattended for a good long while

I do love to combine cheese and puerh. Also cheese with oolong. I do avoid most of the greener oolongs and green teas with cheese, although sometimes it's unavoidable when an already started tea session runs into a meal that features tea.

On a more serious note, I would avoid drinking young sheng straight after ice cream. However, even knowing these two are not a good combination, I always suffered from the consequence for the next couple of hours!

0532 201 from Yunnan Sourcing - When I bought it last September it was undrinkable but now, while still needing more time, is definitely drinkable. So the Chiang Mai climate does speed up the progress of young shu at least.

Definitely the later. It's kinda difficult to describe, but it became slightly difficult to focus strings of thoughts together. It does seem like it could go well with creative and/or repetitive work. Unlike some teas I've had, the energy didn't really grow over the session, it was more of a hit hard at the beginning. At the very least, this would make a great blender, as it's not very complex, and it's strong.
The price is very nice. If I were to just buy one, it would cost more to ship it than the price of the cake itself. I definitely think it's worth a sample.
