I've found time to be most important for green tea and white tea especially. Some black tea, and puerh i've found to be a little more forgiving.

Hi All,

I chose "very important" because if I don't use a timer I am very likely to wind up with wasted tea! With my favorite Japanese greens even 10 seconds can make a difference and when I goof I tend to miss bad!

Took the day off to go bring my daughter home from her first year of college...seems like just yesterday I was on here writing about squeezing in a session of tea before heading out to drop her off!

Today's teas: Went to breakfast with DH and brought my own Ceylon. Right now I'm enjoying a first steep of yummy o-cha YM sincha...oops, that's all gone, gotta go make the 2nd steep!

When I get back, I'm going to go on-line shopping for my Mother's Day presents...tea and teaware!

Ah, enjoying a lovely Ba Xian Dancong for the last few hours. Whatever the advantages may be to inexpensive DC, nothing compares to a good one.

I said not too important...for some teas it is but my favourites (which is what the poll is about) are all the sort that never seem to get bitter or unpleasantly astringent...they're rich and deeply satisfying with a long time and light and refreshing with a short time. :)

The Favourites are aged lapsang souchong, single bush milan dancong and aged, strongly roasted TGY.

I'm drinking Bukhial Estate Assam tonight :)

Actually it went well! See before and after below!! Pardon the pic quality, I used my cell phone. My new tidepool chawan was perfect as the lip facilitated the sharing pour very well. I prepared it very casually but they were quite impressed.

I find that the tea and brewing method being applied dictate the importance of time really. It's always important, but most of the teas I drink are very forgiving if I "fudge the numbers" if you will.

Edit: I started the day with some Rishi Snow Buds, finished with some of their TGY.

I answered time is also paramount for my fave type of tea, Japanese greens. Sometimes a few seconds can make a huge difference.

Missed TD all day yesterday. But had some excellent shincha Yame the Ultimate from Zencha and then shincha Magokoro from Yuuki-Cha.

2 packages of shincha arrived from O-Cha.

So, it was a great TeaDay.
