As with most things I do, intuitively wins out every time! However, since Japanese greens are my fave and since our dear mod is my husband...[and he is OCD!], it sensing all the way with greens.
Other faves, such as LongJing and Keemuns, I can wing it intuitively.
But of course, when at home, he does virtually all the brewing, which is fine by me.
