dong ding is my go to Oolong.
i see allot of mention of roast. well i drink it as is and some times i admit i want that heavy dong dig roast combo in the taste so i roast it my self.
might i suggest trying to roast some yourself and figure time vs. roast level and try to repeat it. i use a charcoal roaster i made and like the slow approach oh 30-45 min low slow heat. i tried the fast high heat but that causes this teas taste profile to loose out.
this is one of the best teas to use for iced tea too. roasted or not i do not seem to be able to over steep it. never does it get bitter or astringent and when warmed or refreshed in a roaster it just pops in the mouth.
the use of a sniff cup with this tea is one of the magical tea things i just do not pass up.
