Sencha ice brewing

by coconut » Oct 21st, '09, 20:15

Just wanted to share my experience. Filled a heaped teaspoon of premium sencha in a banko pot and layered on the ice cubes. I used about 3 or 4 ice cubes and it looked like the ratio of water to tea was about 1.5 to 1. It took a long time for them to melt but the results were worth it. The tea turned out sweet and thick, like a sugar syrup, it was amazing. None of the bitternes of improperly brewed japanese green. Has anyone else tried this?

I have. It's pretty much the only way I brew in July and August. It's sooo easy and you can make a lot at once and have your tea ready for the whole day. I have a big glass pitcher that I throe a generous amount of sencha in and ice cubes and let it brew overnight. In the morning I just pour it in a huge travel mug and I'm good for the monring. It saves me so much time in the morning. I'll do a second steeping sometimes as well.

It tastes different, less umani, but less astringency.
