Usually, I just know. When I don't, I look at and sniff the brew. It works pretty well for me most of the time, since I've got a good internal clock.

Thank you Geek, Seeker, Victoria and Adam for coloring TD for us today.
I am mostly a TeaFairie De-Winger, opting for a timer (using the count up feature in order to avoid hearing the bleeping beeping) with the tea I brew most, Japanese Greens. All other teas, I may hit the "count up" feature on the timer and may pay little attention to it ... paying attention to things like aroma, color, leaf.
But I have to say, the count up feature on timers is really the way to go ... I pay so much less attention to time and the timer as a result, and as mentioned, no beeping to interupt the TeaMood.
Began the TD with a trial tasting of the newer Organic Kabuse from O-Cha which is exceptional! Hits the gyo and sencha notes quite nicely. Next up Genmaicha at the sushi bar with DW ... and now a tasting of Zencha Fuga LE.

Sometimes I miss, but I pretty much just have a feeling for when the tea is done. I'm sort of moving from task to task all the time and that requires a sense of timing. It's probably a holdover from raising kids. You know, put breakfast on the stove, wake the kids, flip the eggs, wake the kids again, pour the water on the tea, pull the covers off the kids, pour the tea, plate the eggs, put the bread in the toaster, sip the tea, help the older one find her shoe, sip the tea, come the little one's hair, sip the tea.
They're grown now, but the endless moving from task to task remains.

I'm usually a counter, but with aged puerhs it's pure instinct. I'm drinking a 2004-A sheng tonight that I first brewed late this afternoon. On my seventh infusion & it's just hitting it's stride...love this tea.

Three teas today--counted for three infusions of select sencha to start the day; looked at the color and 'just knew' for the sweet earthy puerh labelled only in Chinese that I got from wing hop fung a year ago; counted, looked, and smelled through two rounds of infusions from the last of the Royal Dragon's Well. No timer today.

I think I'll pick the force, before George ruined it with the addition of midi-chlorians.
Sometimes that fact that I've got out of bed and made it downstairs to the pot/gaiwan means that the brew I started last night is magically just ready for drinking at that exact moment, which is nice.

I think I realized why at least for me it's just a sense of timing. I cook/bake so much that there's just an internal clock for "doneness." Without looking at a timer or peeking in the oven, I can pretty much tell you when the bread's done in the oven from upstairs with the door closed. It's just that feeling that you get when you get to know a process.
Also, tea came in today! Had a cup of Sagittarius while cooking dinner, finished off the evening with White Symphony. Another TeaAdventure has begun, and I like where it's going!
