Brewing recommendations of Genmaicha
I got some Genmaicha dusted w/ Matcha from Den's Tea, but I find that their brewing instructions for it are a bit too expensive. I'm wondering if anyone here can tell me some instructions for steeping/resteeping this tea that doesn't use up leaf so quickly.
Re: Brewing recommendations of Genmaicha
I use 1 teaspoon of leaf per 8 oz of boiling water. Brew for 3 mins. (some people like the water at 180F) You might be able to get a second steep off of it but it definitely won't taste the same since all the matcha powder will be in the first infusion.
Re: Brewing recommendations of Genmaicha
I just received this tea recently, and have been following their instructions, but with 8oz to one teaspoon, and keeping to 30 seconds for the second steep. I have found the second steep to still be quite tasty.

Re: Brewing recommendations of Genmaicha
Temp can depend on the genmaicha. The better the genmaicha, the lower the temp. If it is a houji style genmaicha, boiling is fine, but then I start sliding back a bit on temp for better ones, such as one with actual FF sencha as a component.
Re: Brewing recommendations of Genmaicha
i only tried ippodos genmaicha and for me worked best,150ml boiling water, non-pre-heated pot,5g genmaicha 20-30seconds.
no second steep.

Re: Brewing recommendations of Genmaicha
Basically, Genmaicha is steeped with boiling water in Japan. Genmaicha is affodable daily tea, so people don't care the water temperature.
I personally recommend to use between 170F and boiling.

when brewing teas mixed with matcha i will do a very quick first steeping, no more than 30 seconds. i find i get more of the matcha taste to come out but also balanced by the tea leaves this way. the second steeping i increase the time to get more flavor from the tea leaves. no more than one minute, or two, depending on the tea. i have one sencha with matcha that i do a third steeping, which i do for over one minute. i have not had tea from den's so this may not apply to the tea you are drinking. but it has worked for me in general, and a second steeping has always been flavorful. i don't do this with bancha teas that have no matcha added, i only do one steeping with these teas.
good luck experimenting to find what works for your taste.

Re: Brewing recommendations of Genmaicha
I use about a tablespoon per 6 ounces of water because much of the
tea volume is from the rice. I usually use hotter water than I would for sencha except in the case where 1st harvest sencha is used in the genmaicha, which puts the requirement for lower temp water back in the equation. I personally don't care for the genmaicha with first flush sencha, as I find it rather contradictory. The rice flavor seems to come out better with hotter water, but a first flush sencha needs cooler water. I think originally the rice was added to genmaicha to add to the flavor of later-picked, lower quality tea like bancha.

I brew genmaicha with matcha and kukicha with matcha the same way: 1 level teaspoon to 8 oz water at 180F steeped for one minute. (I use a 16 oz infuser mug.) For the second infusion of genmaicha, I usually add a fresh half teaspoon of matcha. For a second infusion of the kukicha I often add nothing and steep for two minues but sometimes add a half teaspoon of matcha and steep for one. I use Maeda-en brand kukicha with matcha. Genmaicha - I use various brands and add my own matcha.
