Very infrequently, as I use a timer. But occasionally I do overbrew when trying a new tea that I'm not completely familiar with yet.
Today is a day of many greens!

Let's see, joined by Mrs. Chip, began the TD with perfectly brewed tasting of Den's Kunpu, a beautiful asamushi followed by Sae Midori from the O-C ... also perfectly brewed. I am soooo humble!

Chip, you left out the option, "Tea can be overbrewed?" Pu erh shu never gets bitter, which is one reason I like having it at work - I can just leave it brewing without worrying about it. Most blacks and my favorite gunpowder I can drink pretty well-brewed as well. Of course, with my new discovery of Japanese greens, I'm being a lot more careful.
Started off the TD with some strong and long- (but not over-)brewed Keemun, then some coffee for the wake-me-up effect. This afternoon I'm comparing Den's Sencha Fukamidori and their Fukamushi Sencha. Second infusions got just a hint of bitterness, but I'm doing pretty well for a beginner, I think.

A little late update from me, partially because shortly after getting home from work I made my first souffle!!! And it actually turned out pretty well - everyone enjoyed it, although my boyfriend thought it just tasted like a really cheesy omelet... and he can't stand the smell of cooking eggs. But I'm hopeful that I can find a recipe or two that he'll enjoy more. I'm just glad the first one turned out well. Suppose I should share this over in Food Day... but I'm here now...
Snowbud all day at work, some CranApple during the souffle prep! Speaking of, I actually ended up overbrewing the second cup because I was too busy making a roux and trying not to let it burn... oh well.

Thanks! I was pretty proud of it. It didn't go quite as high as the picture, but it just about doubled, and was pretty much perfect.
