Made from leaves that have not been oxidized.

Ippodo does a lot of blending which is their specialty. My understanding was that they used Uji teas.

Linkie ... Kyoto and surrounding areas. So could include Uji which is located in Kyoto prefecture. But Ippodo is based in Kyoto City.

Most of the japanese tea vendors are the blenders of their own tea, this means that they buy tea in aracha - 80% processed tea form at the harvest time, usually from their trusted sources, and they blend their usual recipes for each quality category, and each year they try to produce the same quality tea, but Hibiki-an and Maiko, horaido, Marukyu-Koyamaen have their own farms, as I know hibiki has all the tea from their own farms, they harvest it and process it, so it is certain that they do not mix tea from other regions to their UJI tea.

According to Japanese law, in order to label a tea as "Uji", it must contain at least 50% Uji tea. The same applies to teas in any other area. Uji doesn't have that much land area so this is important.

Nothing wrong with blending tea.
