I just recently started pouring the liquor of my teas into a Thermos to keep them hot over a few hours. But I've noticed something interesting that has me puzzled. Over time, the colour of the tea changes, and with a very fine single estate Darjeeling, the wonderful flavour I have at the beginning is almost absent after an hour in the Thermos.
Two questions come to mind for me as a new connoisseur of fine teas:
(1) Is the prolonged heat over time in the Thermos actually changing the flavour and character of my tea?
(2) Has anyone else experienced an 'anti-climactic' taste in first flush Darjeelings, where after you've had that first wonderfully aromatic and flavourful cup, it just doesn't hit you the same way on the second and third cup of the same brew? Is the astringency of the Darjeeling dulling my taste buds? (For example, I can get a consistent taste in the whole brew from Adagio's Citron Green, but I find myself swishing around inside my mouth to get that same taste one gets from the first sip of Darjeeling.)

Air is an enemy of brewed tea, even in a thermos. Air or oxygen will cause discoloration and "turn" the flavor of brewed tea.
One guy told me he would fill his thermos to the very top eliminating all the air. When he would open it the first time, his tea would be very fresh and still have much of the original color and flavor. Subsequent openings were more and more discolored and had lost more and more flavor.
Hmmm, I got a can of nitro gas from a liquor store. I wonder if flushing the air out with nitrogen would help...works for wine?
