Indeed, gongfu is all about keeping the pot at the right temp.. at least partially :)

Actually, I remember someone on RFDT did a test of the effects of pouring water over the outside of the pot, and it had little to no impact on the internal temperature. Of course I have no link to substantiate this argument... but whatever. :P
