Twice firing is mostly done to reduce the failure of firing and to prevent the deformation of the shapes. Many masters still use one-time firing and is more traditional.
Modern Yixings mostly do twice firing, in the end you will get smoother and more fitting body-lid attachment which can prevent water leaking. Merits of one-time firing yet unknown to me, but might have many..like colors and so.
