Need help brewing darjeeling

by LeoFox » Jul 14th, '20, 21:02

I am using 500 mL glass teapot for brewing and brita filtered water.
I have been given conflicting advice:

1) to brew 8-10 grams of tea per 300 ml for 2 to 4 min for 1st flush and 3 to 5 min for 2nd/3rd flush. Temp is around 85 C ( from a book by tea sommeliers)

2) to brew 3-4 grams of tea per 300 mL for 2-3 min for 1st flush and 4-5 min for 2nd/3rd flush. Temp is around 95C (from tea packaging)

Using method 1, tea seems always overbrewed.

Using method 2 tea seems under brewed for first flush. Seems to work sometimes for 2nd/3rd flush, but depends on estate.

Any advice would be much appreciated, thank you!

For sense of what i like, my preferred way to brew bai mu dan white tea is 7-8 grams per 400 mL water, ~75 C for 10 min.

Note, this is mainly for black darjeeling single estate chinary tea.

Thank you
