Boiling water can bring out more aromas in the tea, and with care the teas will not be scorched.
The best oolongs asks to be steeped with boiling water.

Ut oh. I've been brewing my oolongs too long since I do 5 minutes for all.
So only tightly rolled TKYs should go for 5 minutes?? All others 3 minutes?? And how about the second steep, 4 minutes and 212??
Oy. Can I go back to drinking coffee??

I go 5 mins for TKY then 3 mins for the 2nd steep.
3 mins for most others, 5 on the second steep.
There is no going back, sorry!
