I have one more thing i love making w/ proscuitto:
Take some good artisan bread.
Drizzle a bit of olive oil on it.
Put oven till warm.
Lay down a light bed of spinach (or any other green you prefer).
Put a few thinly sliced pieces of Parmesan cheese (or any other hard cheese) on top.
Lay prosciutto on top.
Broil until golden brown.
Feel free to add your own variations on this, but make sure you keep the basic concept of: bed of greens, hard cheese, and prosciutto.

Purchase whole leg of prosciutto, place on a platter decorated with hard cheese.
