I do a 2-3 minute steep with boiling water, 2 tsp for a 16oz pot with a pinch of lemongrass added for a bit of zing. My fiancee likes his iced tea sweet so it gets some sugar too. The sugar probably helps cut down on the bitterness some. I know the iced tea that I make with the Dooars tea is not bitter or else I would definitely be getting some complaints about it.

Thanks! I'll try that this weekend. I hate to waste tea, so I'll try everything I can to make it come out well. :)
