Personal preference means that I don't follow this rule, but I've heard 1 gram of tea per 1 ounce of water (don't ask me why they're mixing the imperial and metric systems...).

One litre of water has 33.81 ounces, so you're looking at nearly 34 grams of tea, which is way more than what I use. There are some other folks on the site who can probably give some better measurements, but really what it boils down to is personal taste. Just try experimenting! Start with a couple of teaspoons of tea (or 7-10 grams) and see how that works, and then add more or less, depending on how you like your tea.

I have a spoon I use for teas at work, but I usually just measure my tea by 'pinches'. Two pinches of large leafed tea for my 500ml tea pot, and three for my 800ml pot. Small leaf teas and fine grain herbals (like honeybush and rooibos) just get unceremoniously poured from the tin into the pot. I guage my tea by sight and feel, no measuring needed. :D

It is common to develop a ratio of grams per ounce because the ratio is comprehendable. For many teas it is .7 grams for me up to about 1 gram per ounce of water for most greens (close to 1:1 ratio, easier to remember than the typical full metric version). Figure an ounce of water is about 30 ml. This is a higher leaf ratio than most newer tea drinkers use.

Most of us do not think in terms of a whole liter since we brew smaller amounts, like around 200 ml per steep. One reason is due to the huge amount of leaf required to brew a full liter each time. Instead, we tend to go with smaller multible steeps reusing the same leaves.

i do about 2 (max 3 rarely) infusions of ~7oz water from 5g of black tea x 3 minutes

--> probably i'd use 10-15g black tea in 1L water for 3 minutes (but i swirl it and test it at intervals to make sure it doesnt taste too strong or too watery-add more tea to the pot).
