Ok, I'm up for trying out my Pumpkin Chai!!
Brewing tips? I've never brewed Chai and only had it a couple times.
I had it once from a coffee place, I think it had milk.

Do I use Water? Do I add milk?

Help!

I've been making it in a small saucepan: 10-12 oz water, level Tbs of chai, bring just to a boil, add about 6 oz milk and a tsp raw sugar, bring back to simmer for a few seconds. Strain and drink. Yummy. You can make it stronger if you're making it the traditional boiled way, sometimes I do - up to double the amount of tea.

You could go the teapress or teabasket route (teapress is easier), but it's not as good as a quick boil. The spices blend so much better with extra heat.

Geekgirl, just wanted to let you know that my chai arrived in yesterday afternoon's post - December 29th.

I am going to enjoy some on New Year's Eve!

Got mine yesterday!!

I'm going to hold off until I can get some full cream Jersey milk which makes the best chai. Shouldn't be more than a few days.

Thanks Geek & Chamekke I made the Pumpkin Chai tonight!

After awaiting detailed instructions, I then proceeded to spill 1/3 of the pot trying to pour from the saucepan into a cup - through a filter, I might add.

But it was quite delish, and worth it!! Now that I am an expert Chai brewer I feel confident to approach the other samples!!

Thank you!! Very warming on a cool night, such as tonight.

I made the Spiced Vanilla Chai on New Year's Day. It was actually my first tea of 2009. Very easy to make, and I made plenty so that both hubby and I could enjoy it... sweetened with sugar and with an extra dollop of whipped cream on top (plus a sprinkle of cinnamon).

We both loved it... it was pleasantly spiced, not overpoweringly so, and with a distinct vanilla aroma. A wonderful drink to have on a cold day!

I'm really looking forward to enjoying the rest - plus the other two chais :D
